I’ve noticed that pumpkin bread is like this. It is great when it just comes of the oven, but it is at its driest. Then is gets a little more cake-like and flavorful on the second or third day, if it’s stored in the fridge of course.

Any pasta dish or pizza.
Basque cheesecake. When you eat right after letting it cool it will probably taste really eggy, and you won’t get a lot of other flavors. Letting it sit in the fridge for 2 days helps develop the flavor. Also most soups, broths, sauces, etc.

Lasagne is king.
I tried Mary Berries recipie recently and its a masterpiece. Pretty much involves leaving it overnight.
Weirdly, chicken wings. Especially after sitting in the back of the fridge with my regrets
