Spore was a lot of fun and could use a redo.
Big fan of the Fallout series, so an update for the original story would be awesome.

Oblivion with knights of the nine and the shivering isles dlcs. Total annihilation. The darkness.
Star Wars Galaxies. Best crafting system in any MMORPG I ever played. Even the resource extraction and quality was amazing, it determined the final quality of the product. I was the only one on the server able to make primus Armor at maxed out stats. They sold like hot cakes for prices worth a small fortune. The co-op space fights were nice too. Particularly if someone else could craft maxed weapons.
Loom could be cool to rebuild/expand on.
