TIL Johnny Carson was asked by Mel Brooks to play the gunslinger character in the movie Blazing Saddles which eventually went to Gene Wilder. Of that screenplay, Carson, while on a Mexican vacation, told Brooks “I read it in L.A. and it wasn’t funny, and it’s even less funny in Mexico.”

TIL that Mel Brooks thinks Young Frankenstein is his best film. However, he doesn’t think it’s his funniest. That crown goes to Blazing Saddles with The Producers being “hot on its heels.” All 3 films star Gene Wilder. Despite this successful pairing, Wilder never appeared in any other Brooks films

TIL That Steak Tartare gets it’s name from a 13th century myth that Mongols (called Tartars at the time) would ride with meat under their saddles to tenderize it, then eat it raw. Though the story was false and the chronicler who popularized it had never even encountered Mongols himself.
