TIL Mouse do not have a special appetite for cheese, and will eat it only for lack of better options; they actually favor sweet, sugary foods. It is unclear where the myth came from.

not fussy, mice will eat anything. peanut butter for your mousetraps.
Peanut butter with a bit of bacon grease for my mousetraps. That’s the ticket.
I once tried to bait a mousetrap with cheese. Time after time each piece was deftly removed from the trap. The real thing to put in a mouse trap is peanut butter! Works every time!
My guess is it has something to do with the fact that swiss cheese has holes about the size of mouse holes, so maybe even jokingly, the analogy was made. I have no idea of course, but that’s just as plausible as any other reason.
Probably from before everything had added sugar.
