TIL about Cecilia Chiang. Her San Francisco restaurant The Mandarin was highly influential in popularizing Chinese cuisine in the USA. Her son founded P.F. Chang’s, and the son of one of her restaurant’s chefs founded Panda Express.

Chinese restaurants were already everywhere in America by the 1950s when Chiang started.
