TIL about the existence of ice wine, wine made from grapes frozen on the vine, causing a sweeter, more concentrated grape juice to develop.

Just thought this was neat!
I also learned from the article that some other wines involve the grapes being infected with a necrotic fungus, which is slightly less neat and more horrifying.
Ice wine is tasty, but expensive. And super labour intensive. The grapes need to be harvested by hand when they’re just the right level of frozen.
I don’t o ow if it still happens but there used to be an annual ice wine festival in Niagara on the lake and Grimsby every winter. Lots of fun.
