TIL that Thailand’s national dish “Pad Thai” is actually a modern creation invented to combat famine and create nationalism in the 1930s because it created double the volume of food as from the same amount of rice grains as boiled rice.

Huh, cool. I knew it was fairly recent, but I didn’t know the why.
Either way, awesome. Probably my favourite asian dish.
Most meals and recipes used today are recent in their development.
Google old cookbooks and look at the recipes. They are f**king grim to our palette.
I saw that in the article too. I thought you needed more rice to make rice flour needed to make rice noodles. Or was it easier to import rice flour than rice?
