And southerners make it into pickles. It’s sweet and one of my favorite things.
Just underneath the skin/rind of many fruit and veg holds much of the nutritional value iirc.
Wait did you just go to the same potluck dinner that I went to? 😁 Because someone brought watermelon soup made from the rinds and TIL the same thing you did lol
But it tastes like crap.
